Abstract
The InnoCell Bioreactor is an innovative open-source tool that makes high-precision production of SCOBY (naturally containing bacterial cellulose) and the Kombucha drink easier and more efficient than ever before. It works by using a rotating shaft with special disks that help the microbial community used to make Kombucha, called SCOBY, grow in higher yield compared to static culture. The main principle is that the smooth, constant rotation of the Bioreactor optimises the oxygenation of the culture. And the perforated disks optimise surface area and promote efficient growth of the SCOBY, leading to increased production.
The InnoCell Bioreactor is providing a remarkably higher yield compared to traditional static methods and can produce up to 95% more pellicles. Compared with other agitated culture techniques it can produce up to 31% more yield.
The InnoCell Bioreactor is produced mainly using digital fabrication tools (3D printing, laser cutting). Accessories like a removable cloth cover and a heating system (made of a filter, universal aquarium pump, vertical liquid heater, tubes, and a metal holder) were also designed to maintain a constant temperature optimizing the fermentation conditions. In particular, the heating system creates a circulation of the liquid medium inside the tank, resulting in the homogeneity of the culture and enhanced growth conditions.
