Abstract
GrapesTalk is an interdisciplinary project focused on sustainable, food-grade, and zero-waste strategies for the valorization of grape stalks, a largely underutilized byproduct of winemaking. The project explores low-impact extraction methods, such as ultrasound and deep eutectic solvents, to recover bioactive compounds, particularly phenolics, from lignocellulosic biomass. These extracts are characterized and evaluated for applications in winemaking, including as natural additives to replace sulfites. The remaining biomass is converted via hydrothermal carbonization into hydrochar, a potential renewable fuel. This integrated approach aims to transform winemaking waste into valuable products for food and energy applications, promoting circularity and reducing environmental impact.
