Abstract
Apple seeds, commonly considered waste, possess an abundance of nutritional components, including oil, proteins, dietary fibers, minerals, and bioactive compounds. The composition of these seeds is influenced by various factors, such as the apple variety, geographical origin, and postharvest processing conditions. This chapter sheds light on the variations in the nutritional composition among different apple varieties, emphasizing the protein, oil, and fiber content in specific cultivars.
